RECIPE: Dairy-Free Banana Bread

Ingredients:

  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 cups sugar
  • 1 cup pecans or walnuts
  • 3 eggs
  • 1.5 cups light olive oil (or a light tasting oil)
  • 1 8oz. can of crushed pineapple, undrained
  • 1.5 teaspoons vanilla
  • 2 cups mashed bananas (the browner the better)

Instructions:

Sift the dry ingredients and combine the rest. Pour into two loaf pans and bake at 350 degrees for 60 to 90 minutes. Start testing with a toothpick after 60 minutes.
